Healthy Butternut Squash and Kale Pizza

This is the best pizza EVER! It's amazing how easy it is to make and how tasty it is!! The amount of ingredients at each step can vary. If you like something, put a little more! If you don't have enough of one type of cheese, add a little bit more of the other type.

Ingredients:
Store bought pizza dough (I prefer the wheat dough from either Trader Joes or Fresh & Easy
Mashed Butternut Squash - you can use fresh or the packaged microwave kind.
About 2 cups of fresh Kale (take out the stems)
Provolone Cheese
Fresh Mozarella Cheese

Preheat oven to 450 degrees. I put the pizza stone in the oven while I preheat.
Let dough sit out of the refrigerator for at least an hour before use. Use a generous amount of flour to stretch out the dough to the correct size.


Once the oven has reached 450 degrees, I then take out the pizza stone and stretch the dough over the stone.

Put down a layer of provolone cheese evenly spaced (roughly 5-6 slices).
Sprinkle kale over the pizza then add the mashed (microwaved) squash in small generous spoonfuls over the pizza. Top the pizza with fresh mozzarella (slices or grated work too.)


Bake for 10-15 mins or until golden brown.

Chippy Dip Salsa


Chippy Dip Salsa

This recipe turned out to be very easy! For all of the veggies I used a food processor to chop them into small pieces separately, then I combined them in a bowl. 

Ingredients:
4 large tomatoes
3 Med size jalapeƱos 
1 tbsp cilantro
2 garlic cloves minced
4 green onions (include the green ends)
1/4 C. Green pepper
Juice from 1 lime
1/2 tbsp white vinegar 

Mix all of the above ingredients and then set aside. Let the mix sit for 30 mins before mixing in the final ingredients.

1/2 tsp black pepper
Few shakes of red cayenne pepper
1 tsp hot sauce
Salt to taste

Add all spices to vegetables. Then add 1 tsp of water and 1/2 can of tomato paste. Mix together!


Let the mixture sit in a jar/Tupperware in the fridge. Best when you let it sit for several days before you eat it.

Apple Sauce Muffins

Apple Sauce Muffins

These muffins were really great!!! They are really easy to modify, and they are still good! 

Ingredients:

2 cups Wheat Flour (white flour works too)
2 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. ground cloves (optional)
1 cup chopped walnuts (optional)
1 stick unsalted butter, softened
1 cup sugar
1 large egg (room temp)
2 tsp. vanilla
2 cups unsweetened apple sauce


Directions:

Preheat oven to 350 degrees

In a medium bowl:
Sift together flour, baking soda, baking powder, cinnamon, nutmeg, and cloves. Set aside.

Mince the walnuts into very small pieces and set aside.

In a large bowl:
At a medium speed, cream the butter until smooth.
Add sugar and mix (medium speed) until fluffy. 
At a low speed mix in the egg, vanilla, and walnuts.
Add the apple sauce and flour mixture 1/3 at a time alternating. Start with the apple sauce and end with the flour mixture. (Don't over mix).

Pour batter in a 12 cup muffin pan and bake for 25 - 30 mins.
